Simple Cheesecake with Mango Peach Compote
Graham wafer base:
1 cup graham wafer crumbs
1/4 cup melted butter
1 tablespoon sugar
Mix together and press this onto the bottom of a 9 inch round springform pan and set aside.
Cheesecake filling:
1 package plain gelatin
1/4 cup sugar
1/2 cup boiling water
1 1/2 250 gram packages of cream cheese, softened
1 package instant vanilla pudding (4 serving size)
1/2 cup milk
1 cup whipping cream
1. Stir the sugar and gelatin together in a bowl. Pour the boiling water over the top and stir until it is completely dissolved, about 2 minutes. Set aside.
2. In a separate bowl, beat the cream cheese with an electric mixer until smooth. Add the milk and pudding mix, continue to beat. Slowly add the gelatin mixture and whip until smooth and fluffy.
3. In a separate bowl, whip the whipping cream until medium peaks form.
4. Fold the whipped cream into the cream cheese mixture. Pour this onto the graham wafer base and chill overnight.
Topping:
1 large ripe peach
1 ripe mango
2 tablespoons honey
1 ounce white chocolate
1. Place the first three ingredients into a pot and cook over medium low heat, stirring occasionally until the fruit is cooked, approximately 30 minutes. Set aside to cool.
2. Before attempting to make the chocolate curls, make sure that your chocolate is slightly warm by placing it on top of the refrigerator for about an hour. Using a vegetable peeler or a cheese knife, cut thin curls of the chocolate to use as garnish.
Putting it all together:
This cheesecake recipe makes a whole small cheesecake, so cut yourselves the amount that you would like to eat: 1/8 of the cake per person should do. Put the rest in the fridge for your teenagers and they will love you for it… even if they are mad that you made them leave the house while you entertained your special guest. Slightly warm the compote and divide it over the top of the cheesecake slices, allowing it to run down the sides and onto the plate. Top this with two to three white chocolate curls.

This recipe serves two people but since you’ve got a whole cake, the toppings can be doubled or tripled (etc) to serve larger groups.
